Blooming. Toast, grind, and steep your threads before cooking. Skip this and you lose half the flavor. Master it and every recipe on this page tastes like it should.
- Toast the threads in a dry pan for 20 seconds until fragrant.
- Grind with a pinch of sugar or salt using a mortar.
- Steep in 2 tbsp warm liquid (water, milk, or stock) for 10–15 minutes.
- Add the bloomed liquid late in cooking to preserve aroma and color.
