Saffron Honey Granola with Pistachios

Saffron honey granola with pistachios
Ingredients
- 12 threads Raihan Saffron, bloomed in 2 tbsp warm water
- 3 cups rolled oats
- 1 cup raw pistachios
- 1/2 cup slivered almonds
- 1/2 cup unsweetened coconut flakes
- 1/4 cup melted coconut oil (or butter)
- 1/3 cup honey
- 1/4 cup brown sugar
- 1 tsp ground cardamom
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup dried golden raisins or chopped apricots (add at end)
Instructions
- Preheat oven to 325°F / 165°C.
- Whisk oil, honey, sugar, cardamom, salt, vanilla, saffron bloom.
- Combine oats, pistachios, almonds, coconut in a large bowl. Pour wet mixture over and toss.
- Spread on a parchment-lined sheet. Press flat.
- Bake 30 minutes, stirring once at 15 minutes, until deep golden.
- Cool completely. Break into clusters. Fold in dried fruit.
- Store airtight 2 weeks.
