Ingredients

  • 12 threads Raihan Saffron, bloomed in 2 tbsp warm water
  • 3 cups rolled oats
  • 1 cup raw pistachios
  • 1/2 cup slivered almonds
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup melted coconut oil (or butter)
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 1 tsp ground cardamom
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup dried golden raisins or chopped apricots (add at end)

Instructions

  1. Preheat oven to 325°F / 165°C.
  2. Whisk oil, honey, sugar, cardamom, salt, vanilla, saffron bloom.
  3. Combine oats, pistachios, almonds, coconut in a large bowl. Pour wet mixture over and toss.
  4. Spread on a parchment-lined sheet. Press flat.
  5. Bake 30 minutes, stirring once at 15 minutes, until deep golden.
  6. Cool completely. Break into clusters. Fold in dried fruit.
  7. Store airtight 2 weeks.
