Saffron fades after roughly two years as its aroma compound, safranal, dissipates. No harvest year on the label means you cannot know what you are paying for.

Look for deep-crimson threads with a trumpet-shaped flare at one end and no yellow style attached. Pale, uniform, or brittle-orange threads point to dye or low grade.
