Ingredients

  • 4 cups pitted sour cherries (fresh or frozen)
  • 1/3 cup sugar
  • 1 tbsp lemon juice
  • 10 threads Raihan Saffron, bloomed in 1 tbsp warm water
  • Pinch of salt

Instructions

  1. Simmer cherries with sugar and lemon until soft, 15 minutes. Mash.
  2. Stir in saffron bloom and salt.
  3. Spread thin (1/8 inch) on a parchment-lined sheet.
  4. Oven 175°F / 80°C with door slightly cracked, 5–6 hours, until tacky but not sticky.
  5. Cut into strips. Roll. Store airtight.
