Ingredients

  • 10 threads Raihan Saffron, bloomed in 1 tbsp warm water
  • 1 large egg yolk
  • 1 small garlic clove, grated
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup neutral oil
  • Salt to taste

Instructions

  1. Whisk yolk, garlic, mustard, lemon, saffron bloom (with threads).
  2. Stream in oils — neutral first, then olive — while whisking, until thick.
  3. Salt to taste.
  4. Rest 15 minutes for color to deepen.
