Saffron aioli — 10-minute Mediterranean sauce
Ingredients
- 10 threads Raihan Saffron, bloomed in 1 tbsp warm water
- 1 large egg yolk
- 1 small garlic clove, grated
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1/2 cup extra-virgin olive oil
- 1/4 cup neutral oil
- Salt to taste
Instructions
- Whisk yolk, garlic, mustard, lemon, saffron bloom (with threads).
- Stream in oils — neutral first, then olive — while whisking, until thick.
- Salt to taste.
- Rest 15 minutes for color to deepen.
