Ingredients

  • 15 threads Raihan Saffron, bloomed in 2 tbsp warm white wine
  • 2 lb fresh mussels, scrubbed
  • 1 shallot, finely chopped
  • 3 cloves garlic, minced
  • 1 cup dry white wine
  • 1/4 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp chopped parsley
  • 1 tbsp olive oil
  • Salt and pepper
  • Crusty bread, to serve

Instructions

  1. Heat olive oil in a wide pot. Sauté shallot 2 min. Add garlic. 30 seconds.
  2. Add wine + saffron bloom. Bring to a simmer.
  3. Add mussels. Cover. Cook 5–6 minutes until shells open.
  4. Off heat. Stir in butter, cream, parsley. Salt and pepper.
  5. Serve in deep bowls with bread for the broth.
