Saffron Mussels in White Wine (20-Minute Dinner)

Saffron mussels in white wine
Ingredients
- 15 threads Raihan Saffron, bloomed in 2 tbsp warm white wine
- 2 lb fresh mussels, scrubbed
- 1 shallot, finely chopped
- 3 cloves garlic, minced
- 1 cup dry white wine
- 1/4 cup heavy cream
- 2 tbsp butter
- 2 tbsp chopped parsley
- 1 tbsp olive oil
- Salt and pepper
- Crusty bread, to serve
Instructions
- Heat olive oil in a wide pot. Sauté shallot 2 min. Add garlic. 30 seconds.
- Add wine + saffron bloom. Bring to a simmer.
- Add mussels. Cover. Cook 5–6 minutes until shells open.
- Off heat. Stir in butter, cream, parsley. Salt and pepper.
- Serve in deep bowls with bread for the broth.
