Afghan Saffron Rice: Simple Side-Dish Method

Simple Afghan saffron rice as a side dish
Ingredients
- 20 threads Raihan Saffron, bloomed in 2 tbsp warm water
- 2 cups long-grain basmati rice, rinsed and soaked 20 min
- 3 cups water
- 2 tbsp butter
- 1 tsp salt
- Pinch of ground cardamom (optional)
Instructions
- Drain rice. In a heavy pot, melt butter. Stir in rice for 30 seconds.
- Add water, salt, cardamom. Bring to a boil, reduce to lowest heat, cover, cook 18 minutes.
- Off heat. Drizzle saffron bloom (liquid + threads) over half the rice. Cover. Rest 5 minutes.
- Fluff gently with a fork — leave white and gold streaks visible.
